Empire Jerky was conceived with a single goal in mind, to produce truly gourmet beef jerky comprised of the highest quality ingredients possible at a scale that would allow us to reach both jerky lovers and people new to jerky in a nation-wide capacity.
After months of planning our home base was established in Bowen Hills, Brisbane, the game was afoot. Empire directors with extensive experience in both small batch jerky production and large scale business operating worked around the clock over the remainder of 2018 to build a unique facility capable of producing hand crafted jerky from fresh produce and restaurant grade cuts of 100% grass fed Australian beef to the highest possible standards of safety, quality and taste.
100% GRASS FED RUMP BEEF

While using 100% grass fed beef is important to us, chances are you wouldn't be able to tell the difference. The secret however is in the cut. Rump beef has the most flavour of all lean cuts and is far superior in terms of flavour and tenderness than topside, eye of round or any number of cheap cuts used to produce jerky that minimise cost and preparation time.
Rump beef is far more time consuming to process, with a rump being comprised of several groups of muscles that need to be broken down and trimmed prior to marinating. With a tiny amount of marbling retained we seal our jerky in nitrogen to preserve freshness and provide the best end product possible.
Our Smoked Peppercorn Jerky is a lightly seasoned blend of smoked Australian peppercorns and our proprietary gluten free soy sauce.
